Abstract: It is feasible to build an instrument capable of on or at line measurement of the salt content of cheese. It has the potential to replace both in process and final testing for salt in the cheese making industry. The instrument is based on the use of a radioactive source emitting neutrons and is: non invasive, rugged fast, automatic, safe. The principles of the proposed instrument and experimental measurements made to establish its feasibility are described. (auth)
